2 medium-large onions, thinly sliced
4-5 carrots, diced or chopped into quarter rounds
1 garlic clove
1 bay leaf
1 Tbsp. olive oil
2 cups organic red lentils
6 inch piece of wakame
1/4-1/3 cup shoyu or tamari
1/4 cup mirin
Handful of fresh parsley, chopped
Sauté onions in 1 Tbsp. olive oil for 2-4 minutes.
Add garlic and carrots and sauté for another 2 minutes.
Add 7-8 cups of water, 1 bay leaf and 2 cups red lentils plus a 6-inch piece of wakame which has been soaked and chopped.
Boil and simmer 35-45 minutes.
Add 1/4 cup-1/3 cups shoyu or tamari and 1/4 cup mirin.
Cook another 15 minutes.
Garnish with lots of fresh chopped parsley.
