Blueberry banana bread with blueberry coconut cream icing


A colorful recipe proposed by Joy and Michael.

Blueberry cake


1 cup fresh blueberries
1 ¼ cup flour
1 teaspoon cinnamon, powder
1 teaspoon vanilla, powder
½ cup plant based milk
2 whole bananas, ripe and mashed
2 teaspoons apple cider vinegar
1 cup coconut sugar
½ coconut oil, melted
1 teaspoon baking soda
2 teaspoon baking powder
2 tablespoons squeezed lemon


  • Preheat your oven to 350F.
  • Grease the loaf pan.
  • Add the apple cider vinegar to the milk, stir and set aside.
  • Dust your blueberries with flour.
  • Mix your dry ingredients together in a large mixing bowl.
  • Mix your wet ingredients in a medium bowl, including your milk with apple cider vinegar. Mix everything well.
  • Mix your wet into your dry, stirring until combined. Fold in your wild blueberries.
  • Bake for 1 hour or until the center is cooked.
  • Remove from the oven and let cool completely before frosting.

For the cover experiment with: coconut cream (or cream cheese), maple syrup (or powdered sugar), blueberry syrup, some fresh blueberries for decoration.
