Unusual and refreshing light snack or starter.
1 bunch watercress, rocket (aka rucola, arugula) or 1 organic lettuce
1 handful pea sprouts
1 handful sunflower sprouts
1 handful radish sprouts
8 – 10 strawberries sliced finely
2 mandarins peeled and sliced finely
juice of ½ lime or 1 lime – up to you
a good splash of cold pressed olive oil
salt and pepper to taste
1 cup roughly chopped macadamia nuts
1 tbsp hemp seeds (a great complete protein)
Mix everything together and serve straight away.
