Puja shares with us a gluten-free recipe



1 cup cooked quinoa
½ scallion
1 small tomato
½ each of red, yellow or orange peppers
1 bunch spring onions
1/2 cup corn kernels
Sesame/sunflower/pumpkin seeds
Soy sauce or tamari
Black pepper and salt
Olive oil


Boil quinoa separately and keep. In a skillet, heat olive oil and add onions, spring onions. Once translucent, add peppers, tomatoes and sesame seeds. Finally add quinoa, spring onion greens and mix. Once done sprinkle a little soy sauce/tamari and salt/pepper to taste.
