Green Smoothie

A great recipe for breakfast or to bottle up and take with you to have after your yoga class or other exercises!

Green Smoothie

I love this recipe as it has some protein, a great source of iron and the strawberries and passion fruit packed with vitamin C to help your body absorb the iron. Also the banana is full of potassium and the very best thing is it is delicious and very filling. If you feel you need more protein, add a tablespoon of organic protein powder and you can also add a teaspoon of chia seeds for more fiber and omega 3. Aim to use all organic ingredients if you can. I know coconut water is wonderful for our health but it does have to travel a long way to reach us so I tend to use good quality filtered water for my smoothies. You can thin it as much as you like. Sometimes I feel like a thick smoothie and at other times I feel like a long drink so double the water. If using chia seeds you do need more water as they soak up a lot of the liquid.

a handful of rocket (aka rucola, arugula) or kale
1 banana
3 strawberries
1 to 2 cups filtered water or organic coconut water
pulp of 2 passion fruit
a handful of macadamia nuts or cashews
1 heaped teaspoon of spirulina powder

Place the rocket in a blender; pulse until well cut then add the macadamia nuts, banana, strawberries and spirulina powder, pulse for a minute or so and then add the water. Blend until all mixed and then stir in the passion fruit pulp.
