A plant-based and gluten-free recipe from Maria-Carin Gala’s cookbook, Lick My Plate! (video)
Another one of my first healthy cookie creations. I absolutely love the combination of ginger and dates which tastes utterly naughty, but in the scheme of things isn’t really.
If you are anything like me and love cookies so much you can eat a whole batch, and you don’t want to feel sorry for yourself, then make these.
Makes 40 small cookies
Ingredients
Dry ingredients
3/4 cup buckwheat flour
1/2 cup rice flour
1/2 cup almond meal
1/4 tsp salt
1/2 tsp bicarb
1 & 1/2 tsp ground ginger (could add more)
1/4 cup coconut sugar, or muscovado sugar
1/2 cup pitted dates, chopped
Wet ingredients
1/3 cup coconut oil
1/4 cup rice syrup
1 tbsp water
Action!
- Preheat oven to 170 C.
- Mix dry ingredients in a bowl, then add the wet ingredients and knead together into a nice, non-sticking, non-crumbling dough.
- Roll onto a floured surface and cut your desired cookie shapes.
- Bake for 10-ish minutes until they smell good and look slightly browned; of course, this all depends on how you like cookies: over, or underdone, or just right; I like them a little crunchy. Enjoy!
