Recipe for a gluten-free cake from Nirvana
Day one
Ingredients
120g nuts, such as walnuts, almonds, hazelnuts, etc. One kind of nuts will also do. Cut them in small pieces, not powder.
120g dried fruits such as raisins, cherries, figs, kumquats, etc. Also cut in small pieces. Raisins alone will also work well.
Skin of an orange grated very finely. If you use kumquats, no need of orange skin.
Preparation
Soak fruits and nuts overnight in a good glass of rhum, or Kirsch, or grappa, or whatever you like! (If one glass is too much for you, you can use half a glass of alcohol with half a glass of orange juice.)
It’s important to soak the mixture the day before.
Day two
Ingredients
150g non-gluten flour
100g-120g sugar
2 eggs
150g butter, or coconut oil, or margarine if you don’t use dairy
A pinch of salt
15-20gr baking powder
1 tsp of cinnamon
Preparation
First mix flour with fruits and nuts (this will prevent the fruit and nut mixture to fall to the bottom of your mold). Add salt, baking powder and cinnamon.
Mix the sugar with the eggs and butter.
Add this mixture to the flour and fruit and nut mixture.
Bake for 45 minutes at 180 degrees.
